St Patricks Day Foods & 3 Vegetables That Fight Against Stomach Fat
Slow Cooker Corned Beef and Cabbage
Easy and delicious recipe for your slow cooker!
7¼ hours | 10 min prep
SERVES 5
3-4 lbs corned beef brisket
1 onion, coarsely chopped
1/4 cup cider vinegar
1/4 cup brown sugar
1-2 tablespoon Dijon mustard
1/2 teaspoon pepper
1/4 teaspoon ground cloves
1 medium head of cabbage, cut into wedges
1 apple, sliced
1/4-1/2 teaspoon caraway seed (optional)
12 ounces dark beer
Place corned beef brisket and any seasonings included in your slow cooker. Top with onion.
Whisk together the vinegar, brown sugar, mustard, pepper and cloves and pour over top.
Add the cabbage wedges and apple slices and caraway seeds if using them.
Pour beer over top.
Cover and cook on low for about 7 hours or high for about 4-5 hours.
Irish Boxty
Prep Time: 15 Minutes Ready In: 30 Minutes
Cook Time: 15 Minutes Servings: 6
“Boxty is a traditional Irish dish made of potatoes. ‘Boxty on the griddle, boxty on the pan; if you can’t make boxty, you’ll never get a man’.”
Ingredients:
1 1/2 cups grated raw potatoes
1 cup all-purpose flour
1 cup leftover mashed potatoes
1 egg
1 tablespoon skim milk
salt and pepper to taste
1/4 cup olive oil
Directions:
1. Toss the grated potatoes with flour in a large bowl. Stir in mashed potatoes until combined. In a separate bowl, whisk together the egg and skim milk; mix into the potatoes. Season to taste with salt and pepper.
2. Heat the olive oil in a large skillet over medium-high heat. Drop in the potato mixture, forming patties about 2 inches in diameter. Fry on both sides until golden brown, 3 to 4 minutes per side. Drain on a paper towel-lined plate. Serve warm.
Fabulous Fried Cabbage
Prep Time: 5 Minutes Ready In: 50 Minutes
Cook Time: 45 Minutes
Servings: 6
“A favorite old Irish family recipe for fried cabbage and it’s so easy.”
Ingredients:
2 teaspoons butter
1 (15 ounce) can chicken broth Vegie broth is good too
1 head cabbage, cored and coarsely chopped
1 pinch salt and pepper to taste
a splash of Vinegar is optional
Directions:
1. Bring the butter and chicken broth to a boil in a large skillet. Reduce heat to low and add the cabbage. Cover and cook over low heat to steam the cabbage for about 45 minutes, stirring frequently, or until cabbage is tender and sweet. Season with salt and pepper and serve.
Irish Soda Bread
It’s the best Irish soda bread I have ever had. It is much higher, lighter and softer than most other recipes I have seen. It has an excellent flavor and texture as well.

SERVES 16 , 1 9 inch bread
3 1/2 cups flour
1/2 cup sugar less for savory
1/2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
1 pint sour cream
2 eggs
2 tablespoons caraway seeds (optional but I always use them)
3/4 cup raisins (optional)
Combine dry ingredients together in a large bowl.
In a small bowl beat eggs and stir in sour cream.
Add the egg and sour cream mixture to the dry ingredients and stir with a wooden spoon.
Batter will be very thick.
Add the raisins and caraway seeds and stir well with wooden spoon or knead in with your hands.
Place batter in a greased 9 inch springform pan.
Dust the top with enough flour so that you can pat the batter like a bread dough evenly in the pan without it sticking to your hands.
With a knife make a shallow crisscross on the top.
Bake for 50 minutes in a preheated 350ºF oven.
Leprechauns Lemonade Recipe
Ingredients:
2 cups lemonade
1 cup lemon-lime soda
1 cup Mountain Dew soft drink
Ice
Directions
Mix lemonade, soda, and soft drink. Serve over ice.
Lucky Leprechan Lime Drink
A tangy drink for the whole family!

7 cups
1 quart lime sherbet, softened
1/2 cup frozen limeade concentrate
2 tablespoons sugar
2 (12 ounce) cans carbonated lemon-lime beverage, chilled
1-2 cup crushed ice
In a mixing bowl, blend sherbet, limeade and sugar. Stir in soda and ice.
Pour into glasses. Garnish if desired.
Copycat Mcdonald’s Shamrock Shake
I used to absolutely love it when McDonald’s brought out their Shamrock Shakes around St. Patrick’s Day. The past couple of years I haven’t been able to have it because of the dairy, so I was thrilled when I found this copycat recipe! Just use the soy ingredients to make it dairy-free.
5 min | 5 min prep
SERVES 2
2 cups vanilla ice cream or soy ice cream
1 1/4 cups 2% low-fat milk or soymilk
1/4 teaspoon mint extract
8 drops green food coloring
Combine all ingredients in a blender and blend on high speed until smooth.
Stop blender to stir with a spoon if necessary to help blend ice cream.
Pour into 12-ounce cups and serve each with a straw.

Simple Grilled Tofu
A quick and easy way to serve up tofu! I typically just use my Foreman Grill, the tofu gets a nice brown and crisps up quickly. Goes well with buttered rice and veggies. The left overs can be used to make a a hot tofu and cheese sandwich.

SERVES 4
1 (12 ounce) package extra firm tofu
mccormick’s montreal steak grill seasoning (to taste)
1 tablespoon olive oil
Heat Foreman Grill and slice tofu into about 6-8 slices, then half to make 12-16 pieces.
Sprinkle one side of tofu liberally with the McCormick’s Montreal Steak Grill Seasoning and place the seasoned side down on the hot grill.
Season the other side of tofu and drizzle lightly with olive oil before closing grill top and cooking for 2-4 minutes.
Flip tofu and grill for an additional 1-2 minutes or until desired crispiness.

Chemicals that force your body to hold onto belly fat
