SIMPLE,EASY AND OH SO GOOD & FREEZING BREAD
Bread and Bake Goods Bakery Freezer Keeper
We all have had bake goods,bread,buns just get ruined in the freezer. They either get wet or dried out. Putting paper toweling inside the bag will save your bake goods as well as save you money..I use to make all those ruined bake goods into breadcrumbs not anymore.Now I have to purposely dry bread for bread crumbs.

1 loaf bread

Take store bought hamburger buns or hot dog buns from store plastic bag. Wrap paper toweling (2 sheets) around buns (1 sheet between buns) replace into bag and freeze.
When you remove from freezer let them thaw in bag with toweling. Loaves of bread that are sliced, I fold 2 sheets in half lay one sheet on top other on bottom of loaf.
Instant Oatmeal Mix

SERVES 8 , 8 1/4-cup servings
2 cups quick-cooking oats
1 teaspoon cinnamon
1/4 cup brown sugar
1/4 cup chopped walnuts (or dried fruit pieces)
Combine all ingredients in a Tupperware. Store in a cool, dark place.
When ready to serve, mix a rounded 1/4 cup of the mixture with 1/2 cup of water (or 1/2 cup mixture plus 1 cup water).
Microwave for 1 1/2 minute (slightly longer for 1/2 cup).
Simple Mock Chile (Chili) Relleno Flavor Without the Fuss
The flavors of a chili relleno without the work, that is what drew me to this recipe. It was originally posted in our local newspaper. A healthier alternative to a fried chili relleno, this would make an awesome addition to any mexican themed meal.

1 1/2 lbs monterey jack pepper cheese or cheddar cheese (shredded)
1 (7 ounce) can diced green chilies (drained)
3 eggs (beaten)
1 1/2 cups milk
3 tablespoons flour
sour cream (for garnish) (optional)
Preheat oven to 350 degrees. Spray a medium casserole dish with non-stick cooking spray.
Beat eggs and milk together. Add the flour and continue to beat until combined.
Fold in the green chilies and the cheese.
Pour into the casserole dish and back for 40-45 minutes.
Top with a dollop of sour cream and enjoy.
No Bake Eclair Cake
Prep Time: 25 Minutes Ready In: 4 Hours 25 Minutes

“This is a very quick and simple no bake dessert cake. It uses graham crackers and a pudding mixture. It tastes just like an eclair, but there is enough for a crowd!! It is a great recipe for children who are learning to cook, there is no baking involved or any power kitchen tools. Just a bowl and a spoon!”
Use low fat and no sugar ingred.This one tastes like eclair but you can use any flavors.
Ingredients:
2 (3.5 ounce) packages instant vanilla pudding mix
1 (8 ounce) container frozen whipped topping,thawed
2 cups milk
1 (16 ounce) package graham cracker squares
1 (16 ounce) package prepared chocolate frosting
Softened in the microwave for about 30 seconds.
Directions:
1. In a medium bowl, thoroughly blend the pudding mix, whipped topping, and milk.
2. Arrange a single layer of graham cracker squares in the bottom of a 13×9 inch baking pan. Evenly spread half of the pudding mixture over the crackers. Top with another layer of crackers and the remaining pudding mixture. Top with a final layer of graham crackers.
3. Spread the frosting over the whole cake up to the edges of the pan. Cover, and chill at least 4 hours before serving.
Pink Fluff
pink “stuff” as we call it.

1 large pkg. strawberry Jell-O gelatin dessert
12 ounces cottage cheese
9 ounces Cool Whip
8 ounces crushed pineapple, drained
1/2 cup chopped nuts
Stir dry Jell-O into cottage cheese. Fold in Cool Whip. Mix in pineapple and nuts. Chill before serving.
Microwave Rice Pudding
I LOVE rice pudding and this is one of my favorite! Guaranteed not to scorch or curdle! I always add some cinnamon and/or nutmeg to mine . I use leftover rice, but if you don’t have rice already made you’ll need to make some.

SERVES 6 -8
1/2-3/4 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
3 cups milk
1 egg
2 cups rice
2 tablespoons butter
1 teaspoon vanilla
Make sure the rice is cooked ahead of time.
Whisk first 6 ingredients.
Put in microwave and cook 1 – 1 1/2 minutes.
Remove and stir.
Put back in microwave for another 1 – 1 1/2 minutes.
Remove and stir.
Continue above steps until desired thickness (don’t get too thick).
Add butter and vanilla once it’s at desired thickness.
Add anything else you want (cinnnamon, nutmeg, etc).
Quick Pot of Chili
This is a great dinner recipe if you don’t have a lot of time to spend in the kitchen. I stock up on the ingredients because its so quick to assemble and tastes so great!

SERVES 3 -4
1 tablespoon olive oil
1 lb ground beef or ground turkey or ground chicken
1 tablespoon steak seasoning or poultry seasoning
2 garlic cloves, diced
1 (15 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can diced tomatoes, of any flavor variation (e.g. fire roasted, with green chilies, plain)
1 teaspoon Worcestershire sauce
1 teaspoon red wine vinegar
1 (15 ounce) can water
salt and pepper
Brown ground meat in the olive oil in the bottom of a large pot with the garlic and seasoning about 5-6 minutes.
Add in the rest of the ingredients and simmer for 30 minutes-1 hour.
Serve with a dollup of sour cream or shredded chesse.
Lemon Pepper Tuna Quinoa Stirfry
A great all-on-one meal that’s fast, healthy, high in protein and delicious.

SERVES 2
1/2 cup quinoa
1 cup water
1 (6 ounce) can tuna, drained
1 tablespoon low-fat margarine
1 tablespoon lemon juice
1 teaspoon lemon pepper
2 eggs
1/2 cup baby spinach
1/2 cup mushroom, sliced
salt, to taste
pepper, to taste
Bring water and quinoa to boil, then simmer until water is gone, about 10 minutes.
Saute tuna in margarine and lemon juice on low in seperate frying pan.
Move tuna to side of pan, scramble eggs in other side.
Once quinoa is cooked, add to frying pan with spinach, lemon pepper and salt and pepper, mix all ingredients thoroughly.
Heat through on low for about 5 minutes, adding sliced mushrooms in the last few minutes.
