I suspected that the topic of eating to stave off diabetes, featured in this week’s A la Carte, would generate considerable interest.
Sure enough, a day after the story came out, the Ashland Food Co-op class (which had plenty of room Wednesday morning) is full. I’ve already fielded one reader’s gripe, but I’ll offer this advice: If an event piques your interest, don’t wait until the day of to register. Admittedly, the newspaper treads a delicate balance between giving people too much advance notice and not enough.
Happily, the Co-op is assembling a waiting list for a second class, likely to be held in May. And that’s not the only chance students will have to learn more about eating for health.
Kia Sanford, co-instructor of today’s class, is hosting an entire series next month at Allyson’s Kitchen in Ashland. Titled “Healthy Gourmet,” the four classes will focus on the truth about fats, carbohydrates and protein, as well as healthful snacks. Each class is $45 with a 10-percent discount for multiple sessions. See Allyson’s Web site for Sanford’s schedule.
And while you’re at it, check out Allyson’s new “Budget Gourmet” series. The next course, planned for Tuesday, is a Mexican fiesta. Mediterranean, Indian, Thai, French and Italian also are on the next month’s lineup.
Chef instructor Cristina Topham also is making good on her promise to take students on a farmers market tour, where she’ll plan a menu based on seasonal ingredients. That’s slated for May 16.
